1 lb. salmon fillets, preferably wild
Skin salmon if not already done. In large pan, bring 2 inches of water to simmer. Add salmon fillets in single layer. Gently boil, cover, and poach until cooked through, 8-10 minutes. Cool slightly and add salmon and 1/4 cup cooking water to food processor. Blend until desired consistency is reached. Add water as needed to blend.
